So, on my first full day in Kampala after the Tonj team flew back to the United States, Suzy, Kerrie, Neltia, and I went to visit one of Suzy’s friends, Beza. Beza is an Ethiopian woman whom Suzy met at the Hope Refugee Center here in Kampala when Suzy was teaching English classes. Beza and her husband, Shimeles, had us over for an Ethiopian Coffee Ceremony, which is a really amazing process!
First, Beza roasted the beans. I had no idea that coffee beans are white!
Then she laid them out to cool. These are very dark roasted beans…
Then the beans were ground and put into the pot to boil. Beza actually let it boil, and then poured the coffee into a secondary container, poured back into the pot, and let it boil some more. She did this several times before the coffee was ready…
This is basically espresso roast coffee, and it is absolutely divine! I think that was one of the best cups of coffee I have ever tasted!
